Ingredients
- ½ cup unsalted butter softened
- ⅝ cup granulated sugar about 10 tablespoons
- 1 egg
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- ¼ teaspoon baking powder
- ¼ teaspoon baking soda
- Pinch of salt
- *For the Pink Almond Frosting:*
- ¼ cup unsalted butter softened
- 1 ½ cups powdered sugar
- 1 tablespoon milk
- ½ teaspoon almond extract A few drops of pink food coloring
Instructions
- *Make the Cookies· Preheat your oven to 350°F (175°C).
- · Cream together the butter and sugar until light and fluffy.
- · Add the 2 tablespoons of the beaten egg and almond extract, mixing well.
- · In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- · Gradually add the dry ingredients to the wet ingredients until combined. · Roll the dough into 1 ½ inch balls and place on a lined baking sheet. · Flatten each ball slightly with the palm of your hand.

- · Bake for 9-11 minutes, until the edges are set but not golden brown. · Allow the cookies to cool completely.
- *Make the Frosting:* · Beat the butter until creamy, then gradually add powdered sugar. · Add milk and almond extract, then beat until smooth. · Add a few drops of pink food coloring and mix until fully incorporated.
