Ingredients
  

  • ½ cup unsalted butter softened
  • cup granulated sugar about 10 tablespoons
  • 1 egg
  • 1 teaspoon almond extract
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda
  • Pinch of salt
  • *For the Pink Almond Frosting:*
  • ¼ cup unsalted butter softened
  • 1 ½ cups powdered sugar
  • 1 tablespoon milk
  • ½ teaspoon almond extract A few drops of pink food coloring

Instructions
 

  • *Make the Cookies· Preheat your oven to 350°F (175°C).
  • · Cream together the butter and sugar until light and fluffy.
  • · Add the 2 tablespoons of the beaten egg and almond extract, mixing well.
  • · In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  • · Gradually add the dry ingredients to the wet ingredients until combined. · Roll the dough into 1 ½ inch balls and place on a lined baking sheet. · Flatten each ball slightly with the palm of your hand.

  • · Bake for 9-11 minutes, until the edges are set but not golden brown. · Allow the cookies to cool completely.
  • *Make the Frosting:* · Beat the butter until creamy, then gradually add powdered sugar. · Add milk and almond extract, then beat until smooth. · Add a few drops of pink food coloring and mix until fully incorporated.
  • *Assemble:* · Once the cookies are cool, generously frost each one with the pink almond frosting. Enjoy your halved batch of pink sugar cookies!
