In ¼ cup water, add yeast & sugar, let sit 5 mins, then stir to dissolve.
Mix flour & salt, make a well, pour in yeast mix. Add ⅓ cup water, mixing until you have a firm dough.
Knead on a floured surface for 10 mins until smooth. Place in an oiled bowl, cover, let rise 1 hr.
Divide into 4 pieces, shape into balls, then press a hole in the center to form bagels. Rest 10 mins.
Preheat oven to 425°F. Boil bagels for 1 min per side, then place on a baking sheet. Add toppings if desired.
Bake 20 mins or until golden.
