Ingredients
  

  • 7 oz 200g dark chocolate, chopped
  • 1/2 cup 110g unsalted butter
  • 1/2 cup 100g granulated sugar
  • 1/2 cup 100g packed brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup 65g all-purpose flour
  • 1/4 cup 25g unsweetened cocoa powder

Instructions
 

Melt the Chocolate and Butter

  • Melt the chocolate and butter together in a heatproof bowl.

  • You can use either a double boiler or the microwave (stir every 20 - 30 seconds).

  • Stir until smooth and fully melted.

  • Remove from heat and let it cool slightly.

Mix the Wet Ingredients

  • In a large bowl, whisk together eggs, granulated sugar, and brown sugar.

  • Once combined, add vanilla extract and the melted chocolate - butter mixture.

  • Mix until smooth and glossy.

Add the Dry Ingredients

  • Sift in all - purpose flour, unsweetened cocoa powder, and espresso powder (if using).

  • Gently stir until just combined. Do not overmix.

Fold in Optional Mix - ins

  • If using chocolate chips or nuts, fold them into the batter now.

Prepare the Baking Pan

  • Preheat the oven to 350°F (175°C).
  • Grease an 8x8 - inch baking pan or line it with parchment paper.

Bake the Brownies

  • Bake for 35 - 40 minutes. Bake for 45 - 50 minutes if you want them to be more cake - like.
  • Note: Brownies will continue to set as they cool.

Cool and Serve

  • Transfer them to a wire rack to cool completely.
