Preheat & Prep: Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Cut Heart Shapes: Unroll the puff pastry and use a heart-shaped cookie cutter (or a knife) to cut out 6-8 hearts. For half of the hearts, cut a smaller heart out of the center to create a border.
Assemble the Danishes: Place the whole hearts on the baking sheet. Brush the edges with egg wash, then place the heart borders on top. Lightly press down to help them stick together.
Add the Fillings: In a bowl, mix cream cheese, sugar, and vanilla until smooth. Spread about 1 tbsp of cream cheese filling in the center of each heart. Spoon 1-2 tsp of strawberry jam on top of the cream cheese.
Bake: Brush the edges with egg wash. Bake for 15-18 minutes, or until golden brown and puffed.
Finish & Serve: Top with fresh strawberry slices. Optionally, brush with melted apricot jam or honey for shine.Dust with powdered sugar before serving.
