Ingredients

  • ½ cup 115g unsalted butter
  • 1 cup 170g semi-sweet chocolate chips
  • ¾ cup 150g granulated sugar
  • ¼ cup 50g brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp salt

Instructions

Melt the Chocolate and Butter

  • Combine and heat: In a microwave-safe bowl, add chocolate chips and butter.
  • Melt in intervals: Microwave in 20-second bursts, stirring between each, until smooth and fully melted.
  • Cool slightly: Let the mixture sit for a few minutes to cool down before mixing with eggs.

Mix the Wet Ingredients

  • In a large bowl, whisk together granulated sugar, brown sugar, eggs, and vanilla extract.
  • Beat until the mixture is light, fluffy, and pale in color—about 1–2 minutes.
  • Stir in the slightly cooled chocolate-butter mixture until fully combined.

Combine the Dry Ingredients

  • In a separate bowl, whisk together flour, cocoa powder, baking powder, and salt.
  • Gradually fold the dry ingredients into the wet mixture using a spatula. Mix just until combined. The dough should be soft and thick.

Chill the Dough

  • Cover the bowl with plastic wrap or a lid.
  • Chill the dough in the refrigerator for 30 minutes. This helps the cookies hold their shape and develop a fudgier texture.

Bake the Cookies

  • Preheat your oven to 350°F (175°C).
  • Line a baking sheet with parchment paper.
  • Scoop out tablespoon-sized portions of dough and place them on the baking sheet, spaced about 2 inches apart.
  • Bake for 10–12 minutes, until the edges are set and the centers still look slightly soft.

Cool and Enjoy

  • Let the cookies cool on the pan for 5 minutes before transferring to a wire rack.
  • Enjoy warm for a gooey texture, or let cool completely for a classic chewy brownie cookie bite.

Tips for the Best Brownie Cookies
✔ Don’t overmix – Mix the dough just until the dry ingredients are incorporated to keep the cookies soft and chewy.
✔ Check the texture – If the dough seems too runny, add a little extra flour, but it should remain thick and fudgy.
✔ For extra chocolatey goodness – Press a few extra chocolate chips on top before baking.
These brownie cookies are perfect for when you want the chewy, fudgy texture of brownies but in a convenient cookie form. The semi-sweet chocolate adds the perfect depth of flavor, making these cookies a chocolate lover’s dream!
